A complex blend of ciders from different vintages, all fermented wild, some in barrel, some in tank, before being brought together for a second fermentation in this bottle. Left for two yers, it was then riddled by hand and disgorged. It's a perfect aperitif, loves oysters, chicken, dishes a hint of spice and – of course – cheese.
Very little left of this wonderful creation. The next one might be a while in the offing, so do snaffle if you can. We've been thrilled that our cider has toasted milestone birthdays, new arrivals - as well as the welcome end of a week!
Because numbers are so low, we are limiting to one per person.
