Dragon Orchard in Putley is one of the most famous cider apple orchards in the world and we were fortunate to source Dabinett grown there. Part of this we allowed to ferment spontaneously, whilst we set the rest to ferment under different cultured yeasts. We then blended these parts, for once using more cultured yeast than wild, ageing it in tank for a year before conditioning in this bottle.
The resultant cider is a high toned, juicy and intense expression of the apple, revealing itself in deep apricot and peach fruit, soft black tea tannins and gentle clove spice.
It's truly versatile on the food front. While the breadth and depth of ripe fruit match light spicing, the sparkle and fresh acids suit all manner of cheeses, rich dishes and flavourful vegetarian fare and salads.
