LIttle Pomona was one of five cidermakers to take part in One Juice, our fellow collaborators being Ross Cider, Oliver's Cider, Hogan's and Pilton Cider. As with the others, we received a batch of Dabinett and Browns, to craft with as we pleased. So as always, we used wild yeast to ferment, this time in tank.
The new cider was matured in tank and rum barrels, before blending and bottling with a small amount of sugar for conditioning. Bottled unfiltered and unpasteurised.
On the nose, there's flint followed by green apple and pear skins. On the palate, there's minerality before orange zest crashes in, ahead of a rounded, chalky finish from the tannins.
