A wild ferment, Ashton Brown Jersey is one of the Ross crew's favourite apples. A bittersweet variety that grows slowly, in Ross hands, it produces a truly delightful cider.
Ross says: "Pressed when ripe in 2015, it was fermented in an oak barrel before being left to mature. As the years passed the flavour has evolved, developing caramel notes that blend seamlessly with the savoury, nettle-like notes of the ABJ. A journey to the past."
