Along with Herefordshire and fellow neighbouring counties Worcestershire and Gloucestershire this side of the border, its rich cider country over in Wales too. So we are thrilled to be able to share with you this, the 2019 Rural Method Cider from the talented Davies brothers, Dani and Adam. While their own orchard grows into being, they have been harvesting from a beautiful old orchard between Hay-on-Wye and Bredwardine.
Each year the blend will differ, as with all great seasonal ciders. 2019 includes some of our favourites Foxwhelp (lively and tangy) and Dabinett (the king of bittersweets), plus two other bittersweets, Chisel Jersey and Michelin. Wild yeast fermented, natural sweetness has been kept using the tricky, time-consuming technique of cold racking. The result is a semi-dry liquid with lovely sparkle.
