Forget The Avengers – we have The Collaborators!
It's a super limited trio from three recent, exciting collaborative projects, each offering something completely different.
First off, the Epergne-Russet 2020, the result of a blending session with the visionary that is Felix Nash, of The Fine Cider Company. Liquids from five different barrels were brought together into a complex, thrilling, insanely aromatic and fruit laden cider that works beautifully by itself but also with food.
Next from north of the border, another visionary, Grant Hutchison, owner of cider distribution company re:stalk and Fife based cider shop Aeble. Grant's dream cider would be a super intense, jangly pét nat, especially one that had been nowhere near a bourbon barrel. What did we end up with? A brilliant, gloriously jangly pét nat, that had spent about a year in a bourbon barrel! Called First Waltz.
The final drink was triggered by the mutual love of carbonic maceration we share with the insanely talented team from Pastore, a mixed fermentation, wild brewery based in Cambridgeshire. Along with Helen Anne Smith from the Burum Collective, from the many casks at the brewery we selected one to be refermented on a heap of foraged, carbonically macerated plums. This bottle conditioned beer, La Susina – Italian for plum – is the very concentrated essence of plum, wild, sour and absolutely delicious.
