damson, discovery & perry pear blend
The latest version of DIP is a blend of three fruits in roughly equal parts: strawberry scented Discovery apples, pressed together with carbonically macerated Damson plums, and left to ferment spontaneously. Then when the first of the seasons' Perry pears arrived we blended some of this juice into the fermentation.
The result is a unique drink, very aromatic, almost perfumed and full of the flavours of plums, red fruits, almond, spice, creamy pears and a little tannin at the finish.
Gluten free. Contains naturally occurring sulphites
