A home for our experiments in wine- and cidermaking, this is the second iteration of To Boldly Go!
We brought three fruits together this time – sour Keleris cherries, perry pears and Discovery apples, all locally sourced. The cherries went through a four-week carbonic maceration, a process that deepens colour and enhances the fruitiness of the aromatics, before pressing them together with the apples. Later season, perry pear juice was blended with this and sent to bottle to complete fermentation for a natural carbonation. To remove the remaining sediment, the bottles were all hand disgorged.
The result is bright cherry red in colour, with beautiful aromas of sweet cherry, almond blossom, ripe pears and bubble gum. It’s a full-on riot of cherry and pears in the mouth, with the Discovery apples, providing subtle red fruit perfume. It’s super creamy, with lovely pillowy bubbles and the little sweetness remaining from the perry makes this just about the perfect summer drink!
Serve very well chilled. Gluten free. Vegan friendly. No added sulphites
