
Seyval Blanc & Solaris
Our experiments in fermentation continue, this time with grapes grown right here on Brook House Farm where we are based!
The little vineyard, beyond organically farmed, is the home to two varieties – the tropical Solaris and the lemony Seyval Blanc. The first of these, picked at peak ripeness in October, was sent to tank for a full carbonic maceration, hugely emphasising the grape's tropical fruit character.
In early November we pressed these together with the Seyval Blanc, leaving the juice to ferment spontaneously in steel. We used the natural cold of winter to stabilise the wine and after the malolactic fermentation in spring we sent it to bottle.
A bit of a journey in the making but the destination is a tropical paradise full of juicy, exotic fruits, sweet flowers, citrus pith and oils, incense, spice and soft tannins. Complex, intriguing but always remaining super drinkable from first sip to last.
