It’s been a pleasure and a privilege in recent years to work in collaboration with some brilliant likeminded souls to create new drinks and flavour experiences. In this pack we’ve curated three of them for the curious and adventurous drinker.

Thankful Receiver Our collaboration with the team behind the brilliant food halls and restaurants of Webbs of Wychbold. One cold but gloriously sunny April day we came to taste many barrels and tanks of cider, eventually bringing together cider from three different apples – Egremont Russet, Discovery and Dabinett. This one is a dry, fresh, fruity sparkling cider that is lovely on its own, but we find it goes brilliantly with the many flavours of fine pizza.

Hear No Evil is a favourite of our collaborations with superstar brewery Deya in Cheltenham. This is a bottle-conditioned, barrel-aged wheat beer, refermented on our own perry pear pomace! One of a trio, pictured, with this one you’ll find exquisite sweet pear and floral notes on the nose following through to pear and stone fruits on the palate with gentle acidity and a soft finish. (We were lucky enough to welcome the whole crew for their summer day out!)

When Burum Met Pomona came about during the harvest internship which Burum’s co-founder, Helen Anne Smith, spent with us in 2021, we decided to make some ciders together. In documenting the process, in words, images and video, the Burum team have created a fascinating addition to their educational programmes. This cider made entirely from super beautiful Dabinett apples harvested from Brook House Farm is a still white wine, barrel-aged creation. It’s super fruity and has a wine gum juiciness that is just completely delicious.
